If I can, I try to position things so that any ooze will form its own fillet as it dries, but the only thing the ooze does is show that you have enough glue in the joint- so most of the time I wipe it off before it dries. Mine is offset to the right (Corvair engine)
It's not flying yet, but that distance was recommended to me by people who have many hours flying Corvair powered Pietenpols
If I find it's not right on my plane, I'll either add a trim tab or adjust the fittings.

E as Oscar said, the stacked washer method has been used on a number of planes. My VS is offset about 5/8"- I ran a rod through all the rudder hinges and rotated the VS around the hinges, then made my fittings to fit. that way there is no added stress on the main beam of the VS from twisting it...

A general guideline is 15 mins. per 1/4" thickness I did 4 or 5 at a time and I think I steamed them for 20 mins. My form was actually cut slightly tighter but just cutting to the shape of the rib would work fine. Here are a couple of pics of the form and the high tech steaming device. DSC_0001...

It would be easier to figure out if you gave us the drawing numbers of the pages you do have, as there are different plans packages available.
The 3/3/34 page could be #5 which is the 1 piece wing and rib plan.

The Verner is a lot lighter than the Rotec.
You will have to move the wing back for the W&B.
The only flying Piet I know of with the Verner has the cabane struts straight up and down and has 30 or 40 lbs of lead in the nose.

The early streamlined tubing used for the lift struts had internal ribs (drawing #6) to counter buckling or vibration, so jury struts were not used. (and so, not on the plans!)
Today's tubing does not have the internal ribs so jury struts are commonly added to the lift struts.

Brian, that's basically right but you only need to sheet 4 of the ribs-
the 2 outboard ribs of the center section and the butt ribs of each wing panel.
The sheeting keeps adds a place to attach the fabric on the butt ribs and
keeps the ribs from deforming from the tautening of the fabric.

I would kind of expect Titebond to say they have the best thing out there, and while they are good glues, I have had Titebond II and III fail in exterior projects. While they do take a bit more effort and time to make than just one flat piece of metal, they are not hard to make and they do actually wind up being lighter and stronger.

the actual ash members stay in the per plans location. It is the axle of the landing gear that's moving forward.
As Oscar said, the weight and balance articles are a must read before fabricating the landing gear.

The cabane fitting locations on the fuselage and the wing do not change.
